Cheesecake Stuffed Caramel Cookies (Print Version)

# Ingredients:

→ Cookie Dough

01 - 2 1/4 cups all-purpose flour (280g)
02 - 1/2 teaspoon baking soda
03 - 1/2 teaspoon baking powder
04 - 1/2 teaspoon salt
05 - 1/2 cup unsalted butter, softened (115g)
06 - 1/2 cup granulated sugar (100g)
07 - 1/2 cup packed light brown sugar (100g)
08 - 1 large egg
09 - 1 teaspoon vanilla extract

→ Cheesecake Filling

10 - 4 ounces cream cheese, softened (115g)
11 - 1/4 cup granulated sugar (50g)
12 - 1 teaspoon vanilla extract

→ Topping

13 - 1/2 cup caramel sauce (120ml)
14 - Flaky sea salt for sprinkling

# Instructions:

01 - Preheat oven to 350°F. Line baking sheet. Mix cream cheese filling ingredients until smooth
02 - Whisk dry ingredients. Beat butter and sugars until fluffy. Add egg and vanilla. Mix in dry ingredients
03 - Flatten dough, add cream cheese filling, wrap dough around filling. Roll into balls
04 - Bake 10-12 minutes until edges golden. Cool, then drizzle with caramel and sprinkle with sea salt

# Notes:

01 - Centers will firm up while cooling
02 - Can use store-bought or homemade caramel
03 - Leave space between cookies for spreading
