Sausage and Potato Casserole (Print Version)

01 - 1 pound sausage, sliced
02 - 4 medium potatoes, peeled and chopped into bite-sized pieces
03 - 1 cup asparagus, trimmed and cut into 1-inch pieces
04 - 1 small yellow onion, diced

06 - 1 cup shredded cheddar cheese
07 - 1 cup chicken or vegetable broth

# Instructions:

01 - Preheat oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with olive oil or cooking spray.
02 - Heat a large skillet over medium heat and cook sausage slices until browned. Transfer sausage to a plate and set aside.
03 - In the same skillet, add chopped potatoes and sauté for about 10 minutes, stirring occasionally, until they begin to soften. Add additional olive oil if needed.
04 - Add diced onion and minced garlic to the skillet with potatoes and cook for 3–5 minutes until onion becomes translucent.
05 - Transfer cooked potatoes, onions, and sausage to the prepared baking dish. Gently fold in asparagus.
06 - Evenly pour chicken or vegetable broth throughout the pan. Sprinkle dried thyme, salt, and pepper over the top.
07 - Cover dish with aluminum foil and bake in preheated oven for 20 minutes.
08 - Remove foil, sprinkle shredded cheddar cheese evenly over the casserole, and bake for an additional 15 minutes or until cheese is bubbly and golden brown.
09 - Let rest for several minutes, then garnish with chopped fresh parsley if desired. Serve warm.
