Sheet Pan Sausage and Veggies (Print Version)

# Ingredients:

01 - 397 g smoked kielbasa sausage, sliced
02 - 1 cup butternut squash, diced
03 - 65 g bell pepper (yellow, red, or orange), diced
04 - 1 small zucchini, cut into half-moons
05 - 53 g red onion, cut into thick slices

→ Seasoning and Oils

06 - 2 tablespoons olive oil
07 - 1/2 teaspoon dried thyme
08 - 1/2 teaspoon smoked paprika
09 - 1/2 teaspoon garlic salt
10 - 1/4 teaspoon ground black pepper

# Instructions:

01 - Preheat the oven to 204°C (400°F).
02 - Place diced butternut squash in a microwave-safe bowl. Steam in the microwave for 2 minutes to partially cook while preparing other vegetables.
03 - In a large mixing bowl, combine the partially cooked squash, diced bell pepper, zucchini, red onion, and sliced smoked kielbasa sausage.
04 - Drizzle olive oil over the mixture. Sprinkle with dried thyme, smoked paprika, garlic salt, and ground black pepper. Toss ingredients well to ensure even coating.
05 - Lightly brush a sheet pan with olive oil. Spread the seasoned mixture evenly over the pan.
06 - Bake for 25 minutes or until vegetables are tender and lightly browned at the edges.
