01 -
Heat a large skillet over medium heat. Add pork sausages and cook, turning occasionally, until browned on all sides, approximately 8 to 10 minutes. Transfer sausages to a cutting board and allow to cool slightly.
02 -
In the same skillet, add chopped bacon. Cook over medium heat, stirring occasionally, until fat is rendered and bacon is browned and crisp, about 6 to 8 minutes. Remove bacon with a slotted spoon and drain on paper towels, leaving drippings in the pan if desired for flavor.
03 -
Once sausages are cool enough to handle, cut into thick chunks approximately 1.5 inches each to retain texture during slow cooking.
04 -
Place potato chunks evenly in the bottom of a 4-6 quart slow cooker. Scatter sliced onions over the potatoes. Season lightly with salt and pepper if using, keeping in mind bacon and broth provide additional seasoning.
05 -
Arrange sausage chunks evenly over the onions and potatoes. Sprinkle crisped bacon over the top to distribute flavors throughout.
06 -
Slowly pour chicken or vegetable broth over ingredients in the slow cooker until liquid reaches most of the way up the sides without fully submerging. Potatoes and onions will release additional liquid during cooking.
07 -
Cover with lid and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until potatoes are very tender, onions translucent, and sausages cooked through. The broth will become flavorful and slightly thickened.
08 -
Taste and adjust seasoning if necessary. Gently stir to combine ingredients without breaking potatoes. Serve hot in bowls, ensuring an even distribution of broth, meats, and vegetables. Garnish with chopped fresh parsley if desired.
