Strawberry Cheesecake Quesadillas (Print Version)

A creamy, crispy delight blending sweet strawberries with smooth cheesecake inside golden tortillas.

# Ingredients:

Cheesecake Filling

01 - 6 oz cream cheese, softened
02 - 2 tablespoons powdered sugar
03 - 1 teaspoon vanilla extract

Strawberry Layer

04 - ½ cup fresh strawberries, diced
05 - 1 tablespoon granulated sugar
06 - ½ teaspoon lemon juice (optional)

Quesadillas

07 - 2 large flour tortillas
08 - 2–3 tablespoons butter, for frying
09 - 1–2 tablespoons granulated sugar
10 - ½ teaspoon ground cinnamon (optional)

Optional Toppings

11 - Whipped cream
12 - Powdered sugar
13 - Strawberry syrup
14 - Ice cream

# Instructions:

01 - In a medium bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Beat until the mixture is smooth and creamy.
02 - In a small bowl, combine diced strawberries, granulated sugar, and optional lemon juice. Let the mixture rest for 5 minutes to allow the juices to develop.
03 - Lay the flour tortillas flat. Spread a generous layer of cheesecake filling over one half of each tortilla. Spoon the strawberry mixture evenly over the cream cheese layer. Fold the tortilla in half to enclose the filling.
04 - Heat a skillet over medium heat and melt the butter. Place the folded tortillas in the pan and cook for 2 to 3 minutes per side until the tortillas are golden, crispy, and slightly caramelized. Remove from heat and optionally sprinkle with a cinnamon and sugar mixture.
05 - Cut the quesadillas into wedges and garnish with optional toppings such as whipped cream, powdered sugar, or strawberry syrup. Serve immediately.

# Notes:

01 - Freeze tortillas for 2 minutes prior to assembly to help them hold their shape. Use low heat during cooking to caramelize the tortillas without burning. For a variation, add sliced bananas or chocolate chips to the filling.
