# Ingredients:

Cake

01 - 3 cups Granny Smith apples, diced (can substitute with Honeycrisp or Braeburn)
02 - 1 cup granulated white sugar
03 - 1 tablespoon cornstarch (can be replaced with tapioca starch)
04 - 1 teaspoon freshly ground cinnamon
05 - 1/2 cup dark brown sugar (light brown sugar can be substituted)
06 - 1/2 cup unsalted butter, room temperature
07 - 1 cup Greek yogurt
08 - 2 cups all-purpose flour (can be substituted with gluten-free blend)
09 - 1 teaspoon baking powder
10 - 1/2 teaspoon baking soda
11 - 1/2 teaspoon kosher salt (regular salt can be used)
12 - 2 large eggs, room temperature

Cinnamon Sugar Layer

13 - 1 teaspoon ground cinnamon
14 - 1/4 cup granulated white sugar

Glaze

15 - 1 cup powdered sugar
16 - 2 to 4 tablespoons milk
17 - 1 teaspoon pure vanilla extract

# Instructions:

01 - Combine diced apples, granulated sugar, cornstarch, ground cinnamon, and a splash of water in a saucepan over medium heat. Cook until apples soften and mixture thickens, about 5 to 7 minutes. Remove from heat and let cool.
02 - Mix ground cinnamon with white sugar in a small bowl and set aside for layering.
03 - Preheat oven to 350°F (175°C). Butter a 9x13-inch baking pan thoroughly.
04 - In a large bowl, beat unsalted butter and granulated sugar together until light and fluffy, about 3 to 5 minutes.
05 - Blend in cooled apple mixture, pure vanilla extract, and eggs until smooth and homogeneous.
06 - In a separate bowl, whisk together flour, baking powder, baking soda, kosher salt, and ground cinnamon.
07 - Alternate adding dry ingredients and Greek yogurt to wet mixture, stirring gently until just incorporated.
08 - Pour half the batter into prepared pan; spread apple mixture evenly over it. Sprinkle half the reserved cinnamon sugar over apples. Cover with remaining batter and finish by sprinkling remaining cinnamon sugar evenly on top.
09 - Bake in preheated oven for 35 to 40 minutes until a toothpick inserted in the center comes out clean or with minimal crumbs.
10 - While baking, whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust milk quantity to achieve desired consistency.
11 - Upon removal from oven, pierce warm cake surface with a toothpick or skewer and pour glaze over the top to allow absorption. Let cool slightly before serving.

# Notes:

01 - Use freshly ground cinnamon for enhanced flavor. Allow cake to cool slightly before glazing to ensure proper absorption.
