# Ingredients:

Marinated Steak

01 - ½ cup ponzu sauce
02 - 3 tablespoons canola oil, divided
03 - 3 cloves garlic, minced or pressed
04 - 2 tablespoons sesame oil
05 - 2 tablespoons rice wine vinegar
06 - 1 tablespoon grated fresh ginger
07 - 1 tablespoon brown sugar
08 - ¼ teaspoon crushed red chili flakes (optional)
09 - 1 pound rib-eye, chuck, or hanger steak

Dressing

10 - ½ cup fresh lime juice
11 - 2 tablespoons vegetable or canola oil
12 - 2 tablespoons fish sauce (nam pla)
13 - 2 tablespoons granulated sugar

Salad

14 - ½ cup thinly sliced red onion
15 - 2 Roma tomatoes, cut into wedges
16 - ½ English cucumber, halved, seeded, scored with a fork, and sliced
17 - ½ cup chopped fresh cilantro leaves
18 - ¼ cup chopped fresh mint leaves
19 - 3 green onions, thinly sliced
20 - Little gem lettuce leaves, torn, for serving

# Instructions:

01 - In a medium bowl, whisk together ponzu sauce, 2 tablespoons canola oil, sesame oil, rice wine vinegar, grated ginger, brown sugar, pressed garlic, and crushed red chili flakes. Pour the marinade into a gallon freezer bag, add steak, seal, and marinate for at least 15 minutes or up to overnight.
02 - Heat 1 tablespoon canola oil in a grill pan or large cast-iron skillet over medium-high heat until shimmering. Remove steak from marinade, letting excess drip off; discard marinade. Cook steak for 8–12 minutes total, turning once, until medium-rare and browned on both sides. Transfer to a bowl or platter and rest for 10–15 minutes before slicing.
03 - In a large bowl, whisk together fresh lime juice, vegetable oil, fish sauce, and sugar until the mixture is smooth and sugar is dissolved.
04 - Add sliced steak, thinly sliced red onion, tomato wedges, and cucumber slices to the dressing. Toss gently to combine. Top with chopped cilantro, mint, and green onions. Serve with torn little gem lettuce leaves on the side.

# Notes:

01 - Ponzu is a citrus-infused soy sauce commonly available in grocery stores; a substitute can be soy sauce with fresh lemon, lime, or orange juice.
