01 - 4 boneless, skinless chicken breasts or thighs
02 - 2 tablespoons vegetable oil

→ Aromatics

03 - 2 cloves garlic, minced
04 - 1 tablespoon fresh ginger, minced

→ Peanut Sauce

05 - ¼ cup creamy peanut butter
06 - ¼ cup soy sauce
07 - 2 tablespoons rice vinegar
08 - 2 tablespoons honey
09 - 1 tablespoon sriracha
10 - ½ cup coconut milk
11 - 1 tablespoon lime juice
12 - 1 teaspoon sesame oil

→ Garnish

13 - 2 tablespoons chopped peanuts
14 - 2 tablespoons chopped fresh cilantro

→ To Serve

# Instructions:

01 - Season chicken with salt and pepper. Heat vegetable oil in a large skillet over medium heat. Cook chicken for 6-7 minutes on each side until fully done and golden brown. Remove from skillet, let rest for a few minutes, and slice into strips or cubes.
02 - Add more oil to the skillet if necessary and sauté minced garlic and ginger for 1-2 minutes until fragrant.
03 - Add peanut butter, soy sauce, rice vinegar, honey, sriracha, and coconut milk to the skillet. Stir until combined, then cook for 2-3 minutes until smooth and heated. Stir in lime juice and sesame oil and adjust seasoning to taste.
04 - Return sliced chicken to the skillet, coating it evenly in the sauce. Serve over steamed rice or noodles, garnished with chopped peanuts and fresh cilantro.
