Tuscan Cheese Dip with Vegetables (Print Version)

# Ingredients:

→ Cheese Dip

01 - 8 ounces cream cheese
02 - 1 1/2 cups shredded mozzarella cheese (divided)
03 - 1/3 cup freshly grated Parmesan cheese
04 - 1/2 cup sour cream (or plain Greek yogurt)
05 - 1/4 teaspoon garlic powder
06 - 1/8 teaspoon salt
07 - 1/2 cup sun-dried tomatoes, chopped
08 - 1/2 cup chopped frozen spinach

# Instructions:

01 - Preheat oven to 350°F.
02 - Combine all of the cheese dip ingredients in an oven-safe dish for serving except for 1/2 cup of the mozzarella, which will be used to top the dip later. You do not need to mix them up yet nor thaw the spinach.
03 - Bake the cheese dip until the cheese is melted, stirring occasionally.
04 - Once melted, add the remaining 1/2 cup mozzarella cheese across the top. Continue baking until the top layer of cheese is melted and starting to brown. For more browning, place it under a broiler instead of baking.
05 - Serve immediately with dunkers like chips or crostini.

# Notes:

01 - Crostini are a great dunker for this cheese dip. Regular balsamic vinegar or a balsamic glaze can add a nice tangy acidity to the richness of the cheese.
02 - To ensure a truly vegetarian dish, make sure you use vegetarian cheeses.
