Elegant Tuxedo Layer Cake (Print Version)

# Ingredients:

→ Chocolate Cake

01 - 2 cups all-purpose flour (240g)
02 - 2 cups sugar (400g)
03 - 1/2 cup cocoa powder (50g)
04 - 1 1/2 teaspoons baking powder
05 - 1 1/2 teaspoons baking soda
06 - 1/2 cup milk (120ml)
07 - 2 eggs
08 - 1/2 cup sour cream (128g)
09 - 1/2 cup vegetable oil (110g)
10 - 1 teaspoon espresso powder
11 - 1 teaspoon vanilla
12 - 1/2 teaspoon salt
13 - 1 cup hot water (240ml)

→ Chocolate Mousses

14 - 4 egg yolks
15 - 2 cups heavy cream (480ml)
16 - 2 tablespoons white sugar
17 - 2 tablespoons cornstarch
18 - 1 teaspoon vanilla
19 - 3.5 ounces dark chocolate (100g)
20 - 4.5 ounces white chocolate (130g)

→ Chocolate Ganache

21 - 5 ounces milk chocolate (140g)
22 - 1/3 cup heavy cream (80ml)

# Instructions:

01 - Preheat to 350°F. Mix dry ingredients. Combine wet ingredients separately. Mix together, add hot espresso. Bake in two 8-inch pans for 35 minutes. Cool and level cakes
02 - Mix egg yolks, sugar, and cornstarch. Heat cream with vanilla. Combine with eggs, then heat until thickened. Split and mix with dark and white chocolate. Fold in whipped cream
03 - Place cake layer in ring. Add dark chocolate mousse, then white chocolate mousse. Chill 30 minutes, add second cake layer. Chill 4 hours
04 - Make ganache with warm cream and chocolate. Cool to room temperature. Spread over chilled cake. Decorate as desired

01 - Use a scale for most accurate measurements
02 - Dark chocolate mousse should set before adding white chocolate layer
03 - Ganache should be room temperature before spreading
