Fluffy mashed potatoes with melted cheese, crispy bacon, and green onions baked creamy and golden.

# Ingredients:

Meats

01 - 6 slices center cut bacon, diced into 12.7 mm pieces, yields approximately 79 ml when cooked

Vegetables

02 - 1.36 kg russet potatoes, peeled and cut into 25 mm cubes
03 - 1 tablespoon finely chopped green onions, optional garnish

Dairy

04 - 180 ml sour cream, room temperature
05 - 120 ml heavy cream, room temperature
06 - 57 g unsalted butter, room temperature, plus additional for greasing
07 - 170 g shredded cheddar cheese, divided (120 g mixed into potatoes, 170 g for topping)
08 - 170 g shredded colby-jack cheese, divided (120 g mixed into potatoes, 170 g for topping)

Spices

09 - 2 teaspoons seasoned salt (Lowery’s recommended)
10 - 1 teaspoon garlic powder
11 - ½ teaspoon black pepper

# Instructions:

01 - Preheat the oven to 190°C. Lightly grease a 23x33 cm baking dish with butter and set aside.
02 - In a medium skillet over medium-low heat, cook bacon pieces for 9 to 11 minutes until just crispy. Avoid over crisping as bacon will further crisp during baking. Transfer with a slotted spoon to a paper towel-lined plate to drain; set aside.
03 - Place cubed potatoes in a large pot and cover with 5 cm of cold water. Bring to a boil, reduce to medium-high heat, and cook for 10 to 12 minutes until tender when pierced with a fork.
04 - Drain potatoes and return them to the pot. Add sour cream, heavy cream, unsalted butter, seasoned salt, garlic powder, and black pepper. Mash until smooth and fully combined.
05 - Fold 120 g shredded cheddar and 120 g shredded colby-jack cheeses into the mashed potatoes until evenly distributed.
06 - Transfer the mashed potato mixture to the prepared baking dish, smoothing to an even layer.
07 - Sprinkle the remaining 170 g cheddar and 170 g colby-jack cheeses evenly over the top. Distribute cooked bacon pieces over the cheese layer.
08 - Place the dish in the preheated oven and bake for 20 to 25 minutes until the cheese is melted and bubbling.
09 - Remove from oven and garnish with finely chopped green onions before serving.

# Notes:

01 - Avoid over crisping bacon during skillet cooking as it will further crisp in the oven, ensuring optimal texture.
