Preheat oven to 350°F (175°C). Lightly coat a 9×13-inch baking dish with nonstick spray.

In a large skillet over medium heat, brown ground beef. Add chopped onion and cook until softened.

Stir in taco seasoning and 1/2 cup water. Bring to a boil, then reduce heat to simmer.

Add drained black beans, diced tomatoes with green chiles, and sour cream. Simmer for 8 to 10 minutes until slightly thickened.

Arrange half of the corn chips in the bottom of the prepared baking dish. Sprinkle with 1 cup of shredded cheese.

Pour the beef mixture evenly over the cheese and chips.

Top with remaining corn chips and the rest of the shredded cheese. Cover the dish tightly with foil.

Bake in preheated oven for 15 minutes.

Remove foil and continue baking for 5 more minutes until casserole is bubbly.

Serve hot with desired toppings such as green onions, sour cream, guacamole, salsa, or jalapeños.
