Walking Taco Casserole Bake (Print Version)

01 - 1 pound ground beef
02 - 1 small onion, chopped
03 - 1 package taco seasoning mix
04 - 1/2 cup water
05 - 1 can (15 ounces) black beans, drained and rinsed
06 - 1 can (10 ounces) diced tomatoes with green chiles
07 - 1/2 cup sour cream
08 - 1 bag (9.25 ounces) Fritos corn chips
09 - 2 cups Mexican-style shredded cheese

14 - Jalapeños

# Instructions:

01 - Preheat oven to 350°F (175°C). Lightly coat a 9×13-inch baking dish with nonstick spray.
02 - In a large skillet over medium heat, brown ground beef. Add chopped onion and cook until softened.
03 - Stir in taco seasoning and 1/2 cup water. Bring to a boil, then reduce heat to simmer.
04 - Add drained black beans, diced tomatoes with green chiles, and sour cream. Simmer for 8 to 10 minutes until slightly thickened.
05 - Arrange half of the corn chips in the bottom of the prepared baking dish. Sprinkle with 1 cup of shredded cheese.
06 - Pour the beef mixture evenly over the cheese and chips.
07 - Top with remaining corn chips and the rest of the shredded cheese. Cover the dish tightly with foil.
08 - Bake in preheated oven for 15 minutes.
09 - Remove foil and continue baking for 5 more minutes until casserole is bubbly.
10 - Serve hot with desired toppings such as green onions, sour cream, guacamole, salsa, or jalapeños.
