Maple Walnut Sweet Potatoes (Print Version)

01 - 3 medium sweet potatoes
02 - ⅓ cup melted unsalted butter
03 - 1.5 teaspoons cinnamon, divided
04 - ½ teaspoon salt
05 - ½ teaspoon pepper
06 - ⅓ cup maple syrup + 2 tablespoons
07 - ⅓ cup chopped walnuts
08 - 1 teaspoon thyme

# Instructions:

01 - Clean sweet potatoes and cut into ½-inch thick rounds (can leave skin on or peel)
02 - Preheat oven to 200°C / 400°F
03 - In a bowl, toss sweet potato slices with melted butter, 1 teaspoon cinnamon, salt, and pepper until well coated
04 - Arrange sweet potato slices on baking tray in single layer with space between slices to prevent steaming
05 - Bake for 25-30 minutes at 200°C / 400°F until potatoes are fork tender
06 - Meanwhile, mix maple syrup, chopped walnuts, remaining cinnamon, and thyme in a bowl
07 - Remove baking tray from oven. Top each sweet potato slice with about 1 teaspoon of the walnut-maple mixture
08 - Return to oven for another 8-10 minutes until sweet potatoes are caramelized around the edges
09 - Serve as is or with crumbled feta cheese sprinkled on top

01 - Adjust baking time based on thickness of sweet potato slices
02 - Feta cheese adds a nice flavor contrast
03 - Can substitute pecans for walnuts
