01 - 2 lbs beef stew meat, cut into chunks
02 - 1 1/2 cups beef broth
03 - 2 tablespoons chipotle adobo sauce
04 - 1 can (about 113 g) diced green chiles
05 - 2 tablespoons apple cider vinegar
06 - 2 tablespoons tomato paste
07 - 1 1/2 tablespoons chili powder
08 - 1 teaspoon dried oregano
09 - 1/2 teaspoon ground cumin
10 - 3 garlic cloves, minced
11 - 1/2 cup yellow onion, chopped
12 - 1/2 teaspoon salt
13 - 1 bay leaf

# Instructions:

01 - Combine beef broth, chipotle adobo sauce, diced green chiles, apple cider vinegar, tomato paste, chili powder, oregano, cumin, minced garlic, chopped onion, salt, and bay leaf in the slow cooker. Stir until thoroughly mixed.
02 - Add beef stew meat to the slow cooker and stir to coat the meat evenly with the sauce mixture.
03 - Cover and cook on low setting for 7 to 8 hours, or until the beef is fork tender.
04 - Remove the bay leaf and serve the beef and sauce hot with tortillas, rice, and beans as desired.

01 - For deeper flavor, brown the beef briefly in a skillet before adding to the slow cooker.
