Doritos Casserole with Chicken (Print Version)

# Ingredients:

01 - 225 g chive whipped cream cheese
02 - 2 cups (200 g) shredded Mexican cheese blend, divided
03 - 1 cup (100 g) shredded Mexican cheese blend, for topping

→ Protein

04 - 3 cups (about 450 g) rotisserie chicken, cooked and shredded

→ Vegetables

05 - 1 bunch green onions, chopped and divided
06 - 250 g canned corn, drained

→ Pantry

07 - 300 g condensed cream of chicken soup
08 - 1/2 teaspoon salt
09 - 1/2 teaspoon black pepper
10 - 1 teaspoon garlic powder

→ Snacks

11 - 3 cups (about 90 g) Doritos, crumbled

# Instructions:

01 - Preheat the oven to 200°C.
02 - Combine whipped cream cheese and condensed cream of chicken soup in a large mixing bowl. Beat with an electric mixer until smooth.
03 - Reserve 1/4 cup of chopped green onions. Add the remaining chopped green onions, shredded chicken, drained corn, 2 cups shredded Mexican cheese blend, salt, pepper, and garlic powder to the bowl. Stir until evenly combined.
04 - Spread the mixture into a greased 33 x 23 cm baking dish, distributing evenly.
05 - Top with crumbled Doritos, followed by the remaining 1 cup shredded Mexican cheese blend and reserved 1/4 cup chopped green onions.
06 - Bake in the preheated oven for 17–20 minutes until the cheese topping is golden brown.
07 - Allow to cool slightly, then serve hot.

# Notes:

01 - Using rotisserie chicken shortens prep time and develops extra flavor.
