Mix the sweetened condensed milk and peppermint extract in a large bowl.

Using an electric mixer, gradually mix in the powdered sugar until a stiff, non-sticky dough forms.

Roll the dough into balls, place them on a parchment-lined tray, and flatten into 2-inch discs approximately 1/4 inch thick.

Place the tray in the freezer and freeze the discs for about one hour.

Melt the chocolate almond bark in the microwave in 30-second intervals until smooth.

Dip each peppermint patty into the melted chocolate, scrape off excess chocolate, and place it back onto the parchment paper. Optionally, top the patties with sprinkles.
