Combine sugar, lemon juice, and 480 millilitres water in a saucepan. Bring to a gentle boil over medium heat, stirring until sugar dissolves.

Remove saucepan from heat. Add lavender sprigs and roughly sliced strawberries. Allow mixture to steep for 15 minutes.

Strain the mixture into a large pitcher, discarding solids. Add 480 millilitres ice-cold water and, if desired, a few drops of food grade lavender oil. Stir well.

Pour over glasses filled with ice and serve immediately.
