→ Potato Pancakes

02 - 1 small onion, finely chopped
03 - 1 large egg
04 - 1/4 cup all-purpose flour (or gluten-free flour)
05 - 1/2 teaspoon baking powder
06 - 1/4 teaspoon garlic powder
07 - Salt and freshly ground black pepper, to taste
08 - 2 tablespoons olive oil (for frying)

→ Savory Beef Topping

09 - 1 lb ground beef
10 - 1 small onion, chopped
11 - 1/2 teaspoon dried oregano
12 - 1/2 teaspoon paprika
13 - 1/2 teaspoon garlic powder
14 - Salt and freshly ground black pepper, to taste

→ Garnish

15 - 1/2 cup shredded cheddar cheese
16 - Fresh parsley or chives (optional)

# Instructions:

01 - Place grated potatoes in a clean towel and squeeze out excess moisture to ensure crispiness. In a large bowl, combine grated potatoes, finely chopped onion, egg, flour, baking powder, garlic powder, salt, and pepper. Mix thoroughly.
02 - Heat olive oil in a skillet over medium heat. Drop 2 tablespoons of potato mixture into the skillet and flatten into a pancake shape. Fry each side for 3-4 minutes until golden and crispy. Remove and drain on paper towels.
03 - In the same skillet, cook ground beef and chopped onion over medium heat, breaking the meat apart, until browned and cooked through (6-8 minutes). Drain excess fat and season with oregano, paprika, garlic powder, salt, and pepper. Stir to incorporate.
04 - Place cooked potato pancakes on plates. Top each with a spoonful of the beef mixture. Sprinkle shredded cheddar cheese on top and melt by covering the skillet for one minute or microwaving briefly.
05 - Garnish with fresh parsley or chives if desired. Serve immediately.

# Notes:

01 - Squeezing excess moisture from grated potatoes is crucial to achieve crispy potato pancakes.
