Avocado Grilled Cheese Toast (Print Version)

01 - 2 ripe avocados
02 - 10 slices sandwich bread
03 - 10 slices cheese
04 - 0.25 cup fresh coriander leaves, chopped
05 - 1 green chilli, chopped
06 - 0.5 lime, juiced
07 - Butter, as needed for grilling
08 - Salt, to taste

# Instructions:

01 - Halve the avocados and remove the seeds. Scoop out the flesh and roughly chop. Place avocado pulp in a food processor with coriander leaves, green chilli, lime juice, and a pinch of salt. Blend until smooth.
02 - Lay out the bread slices. On one side, place a cheese slice and evenly spread the avocado mixture. Place another cheese slice on top, then cover with a second bread slice to form a sandwich.
03 - Preheat a cast iron pan over low-medium heat and grease with 1 teaspoon of butter. Place the sandwiches in the pan. Cover and cook until the underside is golden and crisp.
04 - Carefully flip the sandwiches, adding another teaspoon of butter to the pan. Press gently and cook until the second side is evenly golden and crisp.
05 - Once both sides are crisp and golden, remove from the pan. Using a serrated knife, slice each sandwich in half. Serve warm.

01 - Rustic bread yields extra crispiness even when cooled.
02 - Gourmet cheese enhances flavor, but regular cheese slices are suitable.
