Halve the avocados and remove the seeds. Scoop out the flesh and roughly chop. Place avocado pulp in a food processor with coriander leaves, green chilli, lime juice, and a pinch of salt. Blend until smooth.

Lay out the bread slices. On one side, place a cheese slice and evenly spread the avocado mixture. Place another cheese slice on top, then cover with a second bread slice to form a sandwich.

Preheat a cast iron pan over low-medium heat and grease with 1 teaspoon of butter. Place the sandwiches in the pan. Cover and cook until the underside is golden and crisp.

Carefully flip the sandwiches, adding another teaspoon of butter to the pan. Press gently and cook until the second side is evenly golden and crisp.

Once both sides are crisp and golden, remove from the pan. Using a serrated knife, slice each sandwich in half. Serve warm.
