Bacon Fried Rice Easy (Print Version)

# Ingredients:

01 - 6 slices thick-cut bacon, chopped
02 - 1/2 large onion, diced
03 - 2 cloves garlic, minced
04 - 1 cup frozen peas and carrots
05 - 4 cups cooked long-grain rice, cooled
06 - 3 large eggs, beaten

→ Seasonings

07 - 2 tablespoons soy sauce
08 - 1 tablespoon oyster sauce
09 - 1 teaspoon sesame oil
10 - Salt, to taste
11 - Black pepper, to taste
12 - 2 green onions, chopped

# Instructions:

01 - Place the chopped bacon in a cold skillet. Turn the heat to medium and cook until the bacon is crispy. Remove bacon with a slotted spoon and set aside, reserving the rendered fat in the pan.
02 - Add diced onion to the skillet with bacon fat and sauté for 3 to 5 minutes until translucent.
03 - Add minced garlic and frozen peas and carrots to the skillet. Cook for 2 to 3 minutes until vegetables are tender.
04 - Stir in the chilled, cooked rice. Sauté for 2 to 4 minutes, allowing the rice to heat and absorb the flavors.
05 - Push the rice and vegetables to one side of the pan. On the empty side, pour in the beaten eggs and scramble until set. Combine with the rice and vegetables.
06 - Increase heat to high. Add soy sauce, oyster sauce, sesame oil, and the cooked bacon. Stir thoroughly to mix all ingredients and flavors.
07 - Taste and season with salt and black pepper as needed. Garnish with chopped green onions and serve immediately.

01 - Using day-old chilled rice prevents clumping and results in the best texture.
