Mediterranean Baked Feta Eggs (Printer-Friendly Version)

# What You'll Need:

→ Main Ingredients

01 - 2 cups cherry or grape tomatoes
02 - 1 red bell pepper, diced
03 - 1/2 small red onion, diced
04 - 3 cloves garlic, minced
05 - 8 ounces feta cheese
06 - 4 tablespoons olive oil
07 - 1 cup baby spinach, chopped
08 - 4 large eggs

→ Seasonings

09 - 1 teaspoon dried oregano
10 - 1 teaspoon sea salt
11 - 1/2 teaspoon dried thyme
12 - 1/2 teaspoon ground black pepper
13 - 1/2 teaspoon red pepper flakes

→ Optional Toppings

14 - Fresh basil or chives, chopped

# Let's Cook!:

01 - Preheat oven to 400°F. Prepare either 4 ramekins (10 oz size) or one 8x8/9x11 baking dish
02 - Divide tomatoes, bell pepper, onion, garlic, and feta between dishes. Drizzle with olive oil. Mix seasonings and sprinkle over top
03 - Bake for 25 minutes. Remove, stir to combine feta with vegetables, then add spinach
04 - Create wells, crack eggs into them. Bake additional 10 minutes. Top with fresh herbs if desired
