01 - 1 lb shrimp, peeled and deveined
02 - 1 tablespoon olive oil
03 - 1/2 cup celery, diced
04 - 1/2 cup onion, diced
05 - 1 clove garlic, minced
06 - 1 cup gluten-free breadcrumbs
07 - 1/4 cup grated parmesan cheese
08 - 1 tablespoon fresh parsley, chopped
09 - 1 tablespoon lemon juice
10 - Salt and pepper to taste

# Instructions:

01 - Preheat the oven to 350°F (175°C).
02 - Heat olive oil in a skillet over medium heat and sauté celery, onion, and garlic until softened, about 5 minutes.
03 - In a bowl, combine the sautéed vegetables with breadcrumbs, parmesan cheese, parsley, lemon juice, salt, and pepper.
04 - Stuff the shrimp with the breadcrumb mixture and place in a greased baking dish.
05 - Bake for 15-20 minutes, or until the shrimp are cooked through and the top is golden.
