Blueberry Lime Cheesecake Cupcakes (Print Version)

# Ingredients:

→ Cupcake Base

01 - 1 1/2 cups all-purpose flour
02 - 1 teaspoon baking powder
03 - 1/2 teaspoon salt
04 - 1/2 cup unsalted butter, softened
05 - 1 cup granulated sugar
06 - 2 large eggs
07 - 1 teaspoon vanilla extract
08 - 1/2 cup milk

→ Cheesecake Filling

09 - 8 ounces cream cheese, softened
10 - 1/4 cup granulated sugar
11 - 1 large egg
12 - Zest and juice of 1 lime

→ Blueberry Lime Glaze

13 - 1 cup fresh blueberries
14 - 1/4 cup granulated sugar
15 - 1 tablespoon lime juice
16 - 1 tablespoon cornstarch
17 - 2 tablespoons water

# Instructions:

01 - Preheat oven to 350°F. Line cupcake pan with liners. Mix flour, baking powder, and salt
02 - Cream butter and sugar. Add eggs, vanilla, and milk. Gradually mix in dry ingredients
03 - Beat cream cheese, sugar, egg, lime zest and juice until smooth
04 - Fill liners halfway with batter, top with cheesecake mixture. Bake 20-25 minutes until done
05 - Cook blueberries, sugar, lime juice, cornstarch, and water until thickened. Cool and drizzle over cupcakes

01 - Let cupcakes cool completely before glazing
02 - Cream cheese should be room temperature
03 - Glaze should be cooled before using
