Breakfast Grilled Cheese Eggs (Print Version)

01 - 1/2 pound ground breakfast sausage
02 - 6 large eggs, beaten
03 - 8 slices Colby-Jack cheese
04 - 4 tablespoons unsalted butter, softened, divided
05 - 8 slices sourdough bread

# Instructions:

01 - In a large non-stick skillet over medium heat, cook and crumble the ground breakfast sausage until it is no longer pink. Transfer the cooked sausage to a medium mixing bowl lined with a paper towel and set aside. Wipe out the skillet with a clean paper towel.
02 - In the same skillet, melt 2 tablespoons of butter over medium-high heat. Pour the beaten eggs into the pan. Allow the eggs to begin setting, then gently stir until softly scrambled and no visible liquid remains. Remove from heat.
03 - Remove the paper towel from the sausage and return the sausage to the bowl. Add the scrambled eggs to the bowl with sausage and stir gently to combine. Wipe out the skillet and preheat over medium heat.
04 - Spread softened butter on one side of each bread slice. Place one slice of bread in the skillet, buttered side down. Top with one slice of Colby-Jack cheese, then add approximately 1/2 cup of the sausage-egg mixture. Cover with another slice of cheese and another slice of bread, butter side facing up.
05 - Cook the sandwich until the bread turns golden brown, about 3–4 minutes. Carefully flip and cook the other side until golden brown. Transfer the finished sandwich to a cutting board and cut in half if desired.
06 - Repeat the assembly and cooking process with remaining ingredients. Serve sandwiches immediately while hot.

# Notes:

01 - These sandwiches can be customized with different cooked breakfast meats like bacon or ham, or made vegetarian with only eggs and cheese.
02 - For added flavor, try browning the bread with mayonnaise instead of butter.
03 - A slice of fresh tomato with salt and pepper adds freshness to the sandwich.
04 - If preferred, use eggs cooked over-easy, over-medium, or over-hard in place of scrambled eggs.
