# Ingredients:

→ Sugar Cookie Crust

01 - ½ cup butter, softened
02 - ½ cup white sugar
03 - 1 egg
04 - 1 teaspoon vanilla extract
05 - 1 teaspoon baking soda
06 - 1 teaspoon salt
07 - 1 ¼ cups all-purpose flour
08 - ¼ cup rainbow sprinkles

→ Cheesecake Filling

09 - 4 (8-ounce) bricks cream cheese, slightly softened
10 - ¾ cup granulated sugar
11 - ¾ cup yellow cake mix
12 - 2 teaspoons vanilla extract
13 - 4 eggs

# Instructions:

01 - Preheat oven to 325°F (165°C). Line a springform pan with parchment paper and set aside. Beat butter and sugar together until light and fluffy. Stir in egg, vanilla, baking soda, and salt. Gradually add flour, a little at a time, stirring until just combined. Fold in sprinkles, then press cookie dough into the bottom of the prepared pan.
02 - In a large mixing bowl, stir cream cheese and sugar together until smooth. Stir in cake mix, vanilla extract, and eggs until well combined.
03 - Pour the cheesecake filling over the crust. Bake for 55-60 minutes, or until the center is nearly set. Allow the cheesecake to cool for 4-6 hours in the refrigerator before serving. Optionally, top with whipped cream, sprinkles, or cookies.
