Cheesy Stuffed Mozzarella Onion Rings (Print Version)

01 - 2 large onions
02 - 1 cup shredded mozzarella cheese
03 - 1 cup all-purpose flour
04 - 2 eggs, beaten
05 - 1 cup breadcrumbs
06 - Oil for frying

# Instructions:

01 - Slice onions into thick rings (about 1/2 inch wide) and separate each ring. Take two rings (one smaller and one larger) and fill space between them with shredded mozzarella, pressing gently
02 - Dredge each stuffed onion ring in flour, making sure to coat all sides evenly
03 - Dip the floured rings in beaten eggs, letting any excess drip off
04 - Coat each ring thoroughly with breadcrumbs, pressing down lightly to help them stick
05 - Heat oil in deep fryer or large skillet to 350°F (175°C). Add a few rings at a time, frying for 2-3 minutes per side until golden brown and crispy
06 - Remove with slotted spoon and place on paper towel-lined plate to drain excess oil. Serve hot
