Fresh Summer Chicken Burgers (Printer-Friendly Version)

# What You'll Need:

→ Greek Yogurt Sauce

01 - 1 cup Greek yogurt
02 - 2 teaspoons grated lemon zest
03 - 2 tablespoons fresh lemon juice
04 - 2 garlic cloves, minced
05 - 1 tablespoon olive oil
06 - ½ teaspoon salt

→ Burgers

07 - 1 lb ground chicken
08 - ½ cup panko bread crumbs
09 - 1 medium zucchini, coarsely chopped
10 - 1 large egg, lightly beaten
11 - 3 garlic cloves, minced
12 - 1 ear fresh corn, kernels cut from cob
13 - 3 green onions, thinly sliced
14 - ½ medium red bell pepper, finely diced
15 - 1 teaspoon ground cumin
16 - 1 teaspoon salt
17 - 1 teaspoon ground coriander
18 - ½ teaspoon freshly ground black pepper
19 - 2 tablespoons chopped cilantro
20 - 3-4 tablespoons olive oil for searing

→ Tomato-Cucumber Relish

21 - 1 pint cherry or grape tomatoes, quartered
22 - ⅓ medium seedless English cucumber, finely diced
23 - 2 green onions, finely sliced
24 - 1 clove garlic, minced
25 - ¼ cup finely chopped fresh cilantro
26 - Zest of 1 lemon
27 - 2 tablespoons fresh lemon juice
28 - Pinch of salt

# Let's Cook!:

01 - Mix all Greek yogurt sauce ingredients in bowl and refrigerate.
02 - Combine all burger ingredients except oil in large bowl. Mix and form into patties.
03 - Heat oil in large pan over medium heat. Sear patties 2 minutes per side until golden.
04 - Transfer to baking sheet and bake at 425°F for 7-10 minutes until cooked through.
05 - Combine all relish ingredients in bowl, stir gently to mix.
