Chipotle Mayo Potato Wedges (Print Version)

# Ingredients:

01 - 1/2 kg baby potatoes
02 - 2 tablespoons mayonnaise
03 - 1-2 teaspoons chipotle paste
04 - 1 tablespoon water
05 - Salt, to taste
06 - Chopped chives (optional)

# Instructions:

01 - Boil unpeeled baby potatoes until tender but firm, approximately for 10 minutes.
02 - Preheat the oven to 200°C (400°F).
03 - In a large bowl, mix mayonnaise, chipotle paste, and water.
04 - Once the potatoes are cool enough to handle, cut them into quarters. Add them to the bowl with chipotle mayo and gently toss until evenly coated.
05 - Place the coated potatoes in a roasting pan and roast in the preheated oven for 15 minutes.
06 - Turn the oven to a broil/grill setting and finish the potatoes until crisp, about 1-2 minutes longer. Watch carefully to avoid burning.
07 - Sprinkle with flaky salt and chopped chives, if desired, before serving.
