A buttery, moist coconut loaf with a sweet coconut glaze, ideal for brunch and cozy gatherings.

# Ingredients:

Cake

01 - 1 cup unsalted butter (227 g)
02 - 1 1/2 cups granulated sugar (300 g)
03 - 3 large eggs
04 - 1/2 teaspoon vanilla extract
05 - 1/2 teaspoon almond extract
06 - 1 1/2 cups all-purpose flour (180 g)
07 - 1/2 teaspoon baking powder
08 - 1 teaspoon salt
09 - 1/2 cup canned unsweetened coconut milk (120 ml)
10 - 1 cup sweetened shredded coconut (80 g)

Coconut Glaze

11 - 1 cup confectioners' sugar (120 g)
12 - 1/3 cup canned unsweetened coconut milk (80 ml)
13 - 1 teaspoon vanilla extract

# Instructions:

01 - Set the oven temperature to 350°F (175°C) and prepare for baking.
02 - Using an electric mixer fitted with a paddle attachment, beat unsalted butter and granulated sugar together for about 3 minutes until light and fluffy.
03 - In a separate bowl, whisk together all-purpose flour, baking powder, and salt until evenly mixed.
04 - Add eggs one at a time to the creamed mixture, beating just until incorporated after each addition; then mix in vanilla and almond extracts.
05 - Reduce mixer speed to low and alternately add the flour mixture and coconut milk, beginning and ending with the flour mixture. Mix until just combined.
06 - Scrape down the sides and bottom of the bowl, then fold in the shredded coconut with a brief mix.
07 - Line a ceramic loaf pan with parchment paper and lightly butter it to prevent sticking.
08 - Pour the batter evenly into the prepared pan and bake for 60 to 90 minutes, checking doneness by inserting a toothpick into the center; it should come out nearly clean. Adjust baking time as needed based on your oven.
09 - In a small bowl, whisk together confectioners' sugar, coconut milk, and vanilla extract until smooth and free of lumps.
10 - Allow the loaf to cool for 10 to 15 minutes before drizzling the glaze over the top, then sprinkle additional shredded coconut as a finishing touch.

# Notes:

01 - Use the toothpick test to ensure the loaf is fully baked; the center must be set and not wet. Baking times may vary due to pan type and oven differences.
