# Ingredients:

→ Base and Toppings

01 - 4 English muffins, split in half
02 - 4 large eggs
03 - 50 grams breakfast sausage, cooked and crumbled
04 - 60 grams mild cheddar cheese, shredded
05 - Dash of milk for eggs

→ Sausage Gravy

06 - 240 millilitres milk
07 - 60 millilitres sausage drippings
08 - 16 grams all-purpose flour
09 - 1.25 millilitres salt
10 - 1.25 millilitres black pepper

# Instructions:

01 - In a saucepan over medium heat, combine sausage drippings and flour, stirring continuously to form a roux.
02 - Gradually whisk in the milk, stirring constantly to prevent lumps. Season with salt and black pepper, then cook until the gravy thickens. Set aside.
03 - In a mixing bowl, whisk together the eggs with a dash of milk. Heat a skillet over medium heat and cook the eggs until softly scrambled, then remove from heat.
04 - Preheat the oven to 180°C.
05 - Arrange split English muffins on a baking sheet. Spread a generous layer of sausage gravy on each half, then top with scrambled eggs, crumbled sausage, and shredded cheddar cheese.
06 - Bake in the preheated oven for 10 minutes or until the cheese is melted and bubbly.
07 - Remove from oven and allow to cool slightly before serving.
