Fried Honey Cinnamon Pastries (Print Version)

# Ingredients:

→ For the Dough

01 - ½ cup warm water
02 - 3 tablespoons granulated sugar
03 - 1 tablespoon active yeast
04 - 2 ⅔ cups all-purpose flour
05 - ⅓ cup honey
06 - ¼ cup melted shortening
07 - 3 large egg yolks
08 - 1 teaspoon vanilla extract
09 - ½ teaspoon salt
10 - Vegetable oil for frying

→ For the Cinnamon Sugar

11 - ¼ cup granulated sugar
12 - 1 ½ teaspoons cinnamon

→ For the Glaze

13 - 4 ⅔ cups powdered sugar
14 - 2 ½ tablespoons honey
15 - 1 tablespoon melted butter
16 - ½ teaspoon vanilla extract
17 - ¼ teaspoon salt
18 - Warm water as needed

# Instructions:

01 - In the bowl of a stand mixer with whisk attachment, combine warm water, 2 teaspoons of sugar, and yeast. Whisk until just combined, then let sit for 5 minutes until frothy
02 - Switch to dough hook and add remaining sugar, flour, honey, melted shortening, egg yolks, vanilla extract, and salt. Knead on medium speed for 8 minutes until sticky but stretchy
03 - Transfer dough to a clean bowl lightly sprayed with baking spray, cover with plastic wrap or clean kitchen towel. Let rise for 1 hour, until doubled in size
04 - While dough rises, whisk together cinnamon and sugar in a small bowl
05 - Turn dough onto lightly floured surface. Roll into 12"x8" rectangle, dust with cinnamon sugar and press it into the dough
06 - Roll dough from long side and turn diagonally. Score into 8 equal 1" pieces, trim ends by 1½", then cut along scored lines. Place on parchment-lined baking sheet 2" apart
07 - Shape each piece with fingers and let rise for about 45 minutes, until puffy but not doubled
08 - Heat oil in large pan to 365°F. Press risen rolls down lightly with fingers
09 - Fry a few rolls at a time, 90 seconds per side until golden brown
10 - Whisk together powdered sugar, honey, melted butter, vanilla, and salt. Add warm water gradually to reach desired consistency
11 - Remove fried buns to wire rack over paper towels. Gently flatten each bun, then immediately dip into glaze
12 - Repeat frying and glazing process for all honey buns

01 - Taste even better after sitting in airtight container for 1-2 days
02 - Ensure water temperature is 105°-110°F for proper yeast activation
03 - Flattening buns helps achieve dense, melt-in-your-mouth texture
04 - Can substitute butter for shortening if preferred
