Family favorite taco casserole (Print Version)

# Ingredients:

01 - 1 pound lean ground beef
02 - 1 packet taco seasoning mix (1 ounce)
03 - 1 cup salsa
04 - 1 can black beans (15 oz), drained and rinsed
05 - 1 cup frozen corn kernels

→ Toppings & Layers

06 - 2 cups crushed tortilla chips, divided
07 - 2 cups shredded cheddar cheese, divided
08 - 1/2 cup sliced black olives
09 - 1/4 cup chopped green onions
10 - 1/4 cup fresh cilantro, chopped (optional)

# Instructions:

01 - Preheat oven to 350°F.
02 - In a skillet over medium heat, cook ground beef until browned, 5-7 minutes. Drain excess fat.
03 - Stir in taco seasoning and salsa. Simmer 2-3 minutes until thickened.
04 - In a bowl, mix together cooked beef, black beans, and corn.
05 - Spread 1 cup crushed tortilla chips in a greased 9x13 baking dish. Top with beef mixture.
06 - Sprinkle 1 cup cheddar cheese over top.
07 - Add remaining 1 cup tortilla chips, pressing lightly into cheese.
08 - Top with remaining 1 cup cheddar cheese.
09 - Bake 20-25 minutes until hot and bubbly.
10 - Remove from oven and top with olives, green onions and cilantro (if using).
11 - Let sit 5 minutes before serving.
