Preheat oven to 218°C (425°F). Arrange tater tots in a single layer on a baking sheet and bake for 28 minutes, flipping once halfway through.

Remove the tater tots from the oven and allow to cool for a few minutes until they are comfortable to handle. Thread 4 to 6 tater tots onto each skewer.

Place skewers on a parchment-lined baking sheet. Evenly sprinkle grated cheddar cheese, beef bacon bits, and half of the chopped green onions over the skewered tater tots.

Return the baking sheet to the oven and bake for an additional 5 to 7 minutes or until the cheese melts thoroughly.

Remove skewers from the oven and garnish with the remaining green onions. Serve immediately with sour cream on the side.
