Refreshing Summer Veggie Salad (Print Version)

# Ingredients:

→ Vegetables

01 - 2 cucumbers, thinly sliced
02 - 1 pint cherry or grape tomatoes, halved
03 - 1 small red or white onion, thinly sliced

→ Marinade

04 - 1/4 cup apple cider vinegar or red wine vinegar
05 - 2 tbsp extra virgin olive oil
06 - 1 clove garlic, minced
07 - 1 tbsp chopped fresh parsley or dill
08 - Salt and pepper to taste
09 - 1/2 tsp red pepper flakes (optional)

# Instructions:

01 - Wash and slice the cucumbers, halve the tomatoes, and thinly slice the onion.
02 - In a mixing bowl, whisk together vinegar, olive oil, garlic, salt, and pepper. Add red pepper flakes if using.
03 - Combine cucumbers, tomatoes, and onions in a large bowl.
04 - Pour the marinade over the vegetables and toss gently to coat evenly.
05 - Cover and refrigerate for at least 30 minutes, preferably a few hours or overnight.
06 - Toss again before serving and garnish with fresh herbs.
