→ Caramel Layer

11 - 1 cup granulated sugar
12 - 1/4 cup water
13 - 1/2 cup heavy cream
14 - 1/4 cup unsalted butter, cubed
15 - 1/2 teaspoon salt
16 - 1 teaspoon vanilla extract

→ Chocolate Ganache

17 - 1 cup semi-sweet chocolate chips or chopped chocolate
18 - 1/2 cup heavy cream
19 - 1 tablespoon unsalted butter

→ Optional Garnish

20 - Sea salt flakes
21 - Chocolate shavings or curls
22 - Powdered sugar

# Let's Cook!:

01 - Cream butter and sugar, add flour and salt. Press into springform pan. Bake at 350°F for 12-15 minutes until golden.
02 - Beat cream cheese until smooth, add sugar and flour. Add eggs one at a time, then stir in cream and vanilla.
03 - Pour filling over crust. Bake in water bath 55-60 minutes until edges set but center jiggly. Cool in cracked oven 1 hour.
04 - Cook sugar and water until amber. Add cream, butter, salt, and vanilla. Cool slightly before pouring over chilled cheesecake.
05 - Heat cream, pour over chocolate. Let sit, then stir until smooth. Add butter, pour over set caramel layer.
06 - Chill until ganache sets. Garnish with sea salt, chocolate shavings, or powdered sugar if desired.
