01 - 2 pounds boneless skinless chicken breast

06 - 1/4 teaspoon red chili pepper flakes

07 - 2 cups diced grape or Roma tomatoes
08 - 1/2 cup chopped onion
09 - 1/3 cup chopped jalapeño pepper
10 - 1/2 cup fresh chopped cilantro
11 - 1/2 lime, juiced

→ Cheese

12 - 1 cup shredded mozzarella cheese

# Instructions:

01 - Preheat the oven to 400°F (200°C). Cut the chicken breasts into small, even pieces.
02 - In a mixing bowl, combine diced tomatoes, chopped onion, jalapeño, cilantro, lime juice, and 1/4 teaspoon salt. Mix well and set aside.
03 - Arrange chicken pieces in a single layer in a large baking dish. Sprinkle evenly with cumin, garlic powder, red chili pepper flakes, 1/4 teaspoon salt, and black pepper. Toss to coat the chicken thoroughly with seasonings.
04 - Spoon the salsa fresca mixture evenly over the seasoned chicken. Sprinkle the shredded mozzarella cheese on top.
05 - Bake in the center of the oven for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is no longer pink.
06 - Garnish with additional chopped cilantro if desired. Serve hot with side dishes such as rice, bulgur, cauliflower rice, pasta, or tortillas.
