Sausage and Sweet Potatoes Honey Garlic (Print Version)

# Ingredients:

01 - 1 pound Italian or chicken sausage
02 - 2 large sweet potatoes, peeled and cut into 2 cm cubes

→ Sauce and Seasonings

03 - 1/4 cup honey
04 - 3 cloves garlic, finely minced
05 - 2 tablespoons soy sauce or tamari
06 - 1 tablespoon olive oil
07 - 1 teaspoon paprika
08 - Salt, to taste
09 - Black pepper, to taste

→ Garnish

10 - Fresh parsley, finely chopped

# Instructions:

01 - Peel and cut sweet potatoes into uniform 2 cm cubes for even cooking.
02 - Heat the olive oil in a large skillet over medium heat. Add sausage and sauté until evenly browned, about 5 to 7 minutes.
03 - Stir in cubed sweet potatoes with the browned sausage, and continue cooking for 5 minutes, stirring occasionally.
04 - In a bowl, whisk together honey, minced garlic, soy sauce, paprika, salt, and black pepper.
05 - Pour the sauce over the sausage and sweet potatoes. Cover and simmer for 10 minutes, until sweet potatoes are fork-tender.
06 - Transfer to serving plates and garnish with fresh chopped parsley before serving.

# Notes:

01 - For a gluten-free variation, use tamari instead of soy sauce.
02 - Leftovers can be refrigerated in an airtight container for up to 3 days or frozen for up to 2 months.
