Sausage Gravy Tater Bowl (Print Version)

# Ingredients:

→ Base

01 - Tater tots, as many as you need

→ Eggs

02 - 15 large eggs, whisked up
03 - Salt, however much you like
04 - Black pepper, to your taste

→ Sausage Gravy

05 - Your favorite sausage gravy, double batch
06 - If you want some kick, add red pepper flakes
07 - Cayenne powder also works if you like it spicy

→ Topping

08 - Shredded taco cheese blend for sprinkling
09 - Fresh spicy salsa on the side if you want

# Instructions:

01 - Set your oven to 425°F (218°C). Spread the tots on a baking tray. Cook for about 30 minutes until they're golden and crispy, following the package notes.
02 - While the tots are in the oven, cook your sausage gravy. Toss in some red pepper flakes or cayenne if you want more heat.
03 - Heat a big nonstick pan over medium. Cook the beaten eggs with salt and pepper until they’re mostly set but still a little moist.
04 - Start with a layer of crispy tots in each bowl. Add a big scoop of eggs and then ladle on the sausage gravy.
05 - Throw some shredded taco cheese on top. Spoon fresh salsa over if you want. Serve it warm.

# Notes:

01 - Keep tots crispy by baking them right before serving.
02 - Spice up your sausage gravy by changing the amount of red pepper flakes and cayenne.
